Baobab Granola

Ingredients

  1. 3 cups rolled oats

  2. 2 cups sunflower seeds

  3. 1 cup pumpkin seeds

  4. 1 cup unsweetened shredded coconut

  5. 1 cup crushed or sliced almonds

  6. ½ cup flax

  7. 1/3 cup chia seeds

  8. 2/3 cup sesame seeds

  9. 2 tbsp Farafena Baobab Fruit Powder

  10. ¼ cup coconut oil

  11. ½ – 1 cup honey or maple syrup (depending on how sweet you like it)

  12. 9 medjool dates – cut into small pieces

  13. ½ cup golden berries

  14. ½ cup raisins

Instructions

  1. Preheat oven to 300º F. Prepare three large baking sheets by lining with parchment paper.

  2. In a large bowl mix together oats, sunflower seeds, pumpkin seeds, coconut, almonds, flax seeds, chia seeds, sesame seeds and Baobab Powder.

  3. In a small saucepan or in the microwave, melt coconut oil and honey. Stir until combined. (To make it mix well, after heated, add to a blender and blend for a couple seconds)

  4. Pour honey mixture over oat mixture and mix until everything is coated.

  5. Spread granola thinly on baking sheets.

  6. Bake one tray at a time for 20 minutes or until everything is toasted.

  7. Let cool for 10 minutes.

  8. Add everything back into a large bowl and add dates, golden berries and raisins. The granola should still be a little warm which will melt some of the natural sugars of the dried fruit.

  9. Enjoy on top of yogurt, ice cream, in an açaí bowl or simply with milk.
