Moringa Cookies with Baobab Icing

Ingredients

  1. 2 cups all purpose flour

  2. 1 tbsp Farafena Moringa Leaf Powder

  3. ¾ cup coconut oil

  4. 1 cup icing sugar

  5. ¼ tsp salt

  6. 2 large egg yolks

  7. 2-4 tbsp milk (or alternative)

Instructions

  1. Preheat oven to 350º F. Prepare two baking sheets by lining with parchment paper.

  2. In a medium sized bowl, sift together flour and Moringa.

  3. In a mixing bowl beat coconut oil and icing sugar until well combined.

  4. To coconut oil mixture, add salt and egg yolks. Mix until everything is well mixed.

  5. Add flour mixture to wet ingredients and mix well.

  6. While mixing on low, add milk a tablespoon at a time until mixture becomes a dough and comes together into one ball.

  7. Using floured hands, roll into ¾” balls.

  8. Place onto baking sheets.

  9. Press down firmly onto each ball with the bottom of a floured glass.

  10. Bake for 6-8 minutes or until edges are lightly browned.

  11. Let cool completely before icing.
