The glycemic index (GI) is a scale that ranks carbohydrate-rich foods by how much they raise the blood sugar levels compared with a standard food such as white bread or sugar. An ancient grain cultivated in West Africa for over 5,000 years, Fonio is a gluten free alternative to grains such as Quinoa, Couscous and Amaranth. A staple in African cuisine and diets, it is prepared steamed as the anchor in many meals and is also ground down to a powder/flour to be used in baking or as a cereal (traditional use). Called the ‘seed of the universe’ in Malian mythology, it is high in fibre, iron and protein rich, drought resistant and has adapted to diverse growing environments over time.
