1 ½ cups Fonio Flour
3 tsp baking powder
¼ tsp salt
Optional: 1 tbsp sugar
2 eggs (or egg alternative)
2 cups milk (or milk alternative)
¼ cup oil
Optional: 1 tsp vanilla
In a mixing bowl, mix all dry and wet ingredients together and let sit for a couple of minutes.
Heat a lightly oiled pan
Pour 1/4 cup of batter in to pan
Cook for a few minutes until bubbles form near centre of the pancake and edges are dry
Flip and cook for an additional 2-3 minutes
Note: This recipe will make thin and light pancakes. If you would like thicker consistency pancake, add another ½ cup of Fonio Flour to the mix.
