5 large medjool dates – pitted and soaked in hot water for 10 minutes
1 cup rolled oats
½ cup whey protein powder – or similar
2 tsp cinnamon
2 tbsp ground chia seeds
2 tbsp ground flax seeds
½ cup smooth natural seed butter
3 tbsp natural honey
1 tsp vanilla extract
½ chocolate chips (optional)
Soak dates in 1 cup boiling water for 10 minutes.
While dates are soaking add all ingredients to a large bowl.
Using a blender, blend dates until smooth paste.
Add dates to bowl with all other ingredients. (If mixture is too dry, add in water left over from dates – 1 tbsp at a time until you can form balls.) (If mixture is too wet, add oats – 1 tbsp at a time until you can form balls)
Mixture will be moist but will harden once refrigerated.
Roll 1 tbsp balls by hand.
Refrigerate for at least 30 minutes before enjoying.
Keep refrigerated for up to a week.
