Ingredients

  • 1/2 Cup Steamed Fonio (1/2 Cup Dried)
  • 1/2 Cup English Cucumber (Finely Chopped)
  • 2 Medium Tomatoes (Finely Chopped)
  • 2 Spring Green Onions (Finely Chopped)
  • 1/2 Cup Parsley (Finely Chopped)
  • 1/2 tsp Mint (Dried or Finely Chopped Fresh)
  • 1/2 tsp Cumin Powder
  • 1/2 tsp Salt
  • Juice of One Lemon
  • 2 tbsp Olive Oil
  • Instructions

  • Once all ingredients are finely chopped, mix with the cous-cous style Fonio
  • Add lemon juice, olive oil and other condiments
