Fonio GF Pancakes

Ingredients

  1. 1 ½ cups Fonio Flour

  2. 3 tsp baking powder

  3. ¼ tsp salt

  4. Optional: 1 tbsp sugar

  5. 2 eggs (or egg alternative)

  6. 2 cups milk (or milk alternative)

  7. ¼ cup oil

  8. Optional: 1 tsp vanilla

Instructions

  1. In a mixing bowl, mix all dry and wet ingredients together and let sit for a couple of minutes.

  2. Heat a lightly oiled pan

  3. Pour 1/4 cup of batter in to pan

  4. Cook for a few minutes until bubbles form near centre of the pancake and edges are dry

  5. Flip and cook for an additional 2-3 minutes

  6. Note: This recipe will make thin and light pancakes. If you would like thicker consistency pancake, add another ½ cup of Fonio Flour to the mix.
