Fonio Grain Crusted Tilapia

Ingredients

  1. ½ cup Farafena Fonio Grain

  2. 1 tsp paprika

  3. 1 tsp garlic powder

  4. ½ tsp salt

  5. ½ tsp black pepper

  6. ½ tsp cayenne pepper

  7. ½ tsp dried oregano

  8. ½ tsp dried thyme

  9. 4 Tilapia fillets

  10. 1-2 tbsp oil

Instructions

  1. Preheat oven to 350º F. Prepare a baking sheet by lining with parchment paper.

  2. Put all dry ingredients (everything except fish and oil), in a grinder and grind until flour like consistency. For a crunchier texture, blend less.

  3. Place dry seasoning mix into a dish or shallow pan.

  4. Rub oil on both sides of fish.

  5. Dredge fish in dry ingredients.

  6. Place fish on baking sheet.

  7. Bake 12-14 minutes, until flaky. Serve with lemon wedges and salad.
