Fonio Grain Crusted Tilapia

Ingredients
½ cup Farafena Fonio Grain
1 tsp paprika
1 tsp garlic powder
½ tsp salt
½ tsp black pepper
½ tsp cayenne pepper
½ tsp dried oregano
½ tsp dried thyme
4 Tilapia fillets
1-2 tbsp oil
Instructions
Preheat oven to 350º F. Prepare a baking sheet by lining with parchment paper.
Put all dry ingredients (everything except fish and oil), in a grinder and grind until flour like consistency. For a crunchier texture, blend less.
Place dry seasoning mix into a dish or shallow pan.
Rub oil on both sides of fish.
Dredge fish in dry ingredients.
Place fish on baking sheet.
Bake 12-14 minutes, until flaky. Serve with lemon wedges and salad.
