Superfood Protein Balls

Ingredients

  1. 1 cup steamed Farafena Fonio (microwaved recipe)

  2. 4 tbsp Farafena Boabab Fruit Powder

  3. 2 tbsp Farafena Moringa Leaf Powder

  4. 5 large medjool dates – pitted and soaked in hot water for 10 minutes

  5. 1 cup rolled oats

  6. ½ cup whey protein powder – or similar

  7. 2 tsp cinnamon

  8. 2 tbsp ground chia seeds

  9. 2 tbsp ground flax seeds

  10. ½ cup smooth natural seed butter

  11. 3 tbsp natural honey

  12. 1 tsp vanilla extract

  13. ½ chocolate chips (optional)

Instructions

  1. Soak dates in 1 cup boiling water for 10 minutes.

  2. While dates are soaking add all ingredients to a large bowl.

  3. Using a blender, blend dates until smooth paste.

  4. Add dates to bowl with all other ingredients. (If mixture is too dry, add in water left over from dates – 1 tbsp at a time until you can form balls.) (If mixture is too wet, add oats – 1 tbsp at a time until you can form balls)

  5. Mixture will be moist but will harden once refrigerated.

  6. Roll 1 tbsp balls by hand.

  7. Refrigerate for at least 30 minutes before enjoying.

  8. Keep refrigerated for up to a week.
